Coconut bar

When I was a kid I loved a bounty bar, I remember my mum and I were the only ones who liked them in our house. Fast forward to now, and I realise I haven’t had one for ages!

I have been looking for a way to indulge healthily, and now I have this recipe. I recently ran a “Healthy snacks” workshop, and this was the absolute favourite, winning hands down!

Very easy to make and children love them!

Coconut oil is high in natural saturated fats. Saturated fats not only increase the healthy cholesterol (known as HDL cholesterol) in your body, but also help convert the LDL “bad” cholesterol into good cholesterols. By increasing the HDL in the body, it helps promote heart health and lower the risk of heart disease

 

Recipe:

  • 170g desicated coconut
  • 60g coconut oil
  • 4 tbsp of raw honey
  • 1 tsp of vanilla extract
  • For the coating
  • 90g coconut oil
  • 2 tbsp of almond butter
  • 40g cacao powder
  • 4 tbsp of maple syrup
  • Pinch of Himalayan salt

Method:

Melt the coconut oil and add honey, vanilla and salt. Mix in the desicated coconut. Place into a baking paper lined tray, flatten the coconut mixture in and freeze it for 1 hour.

Almond coating – place all ingredients into a pan and melt and mix. Stir until it is combined. Bring it out of the freezer cut into 1 bars, Dip into the cooled melted chocolate. Once covered, pop into the freezer for 30 minutes, until set.
