Chickpea and Mushroom Dahl

Vegetarian curry – This is such an easy recipe to make and a far healthier option when you make it yourself. Chickpeas and lentils are the perfect substitute for meat, not only are they filling but you won’t have that horrible bloated felling from a takeaway.

As a woman who loves her chicken curry, this took me a while to get my head around – a curry with no meat??? Seriously? Well now I get it. My store cupboard is always well stocked with a pack of chickpeas so this recipe can be made at any time and I know it works. The added benefit is my partner loves it too so this recipe fits perfectly into my mantra of vegetarian Mondays.

Like so many, my husband and I loved a Saturday night take away however nowadays since my love of cooking has grown stronger I prefer to make everything I eat from scratch. We may all enjoy one every 6 months as a treat, there’s nothing wrong with it and of course everyone needs a break. Obviously making food from start to finish, cutting out any processed, allows our pallet to adjust and benefit. The cravings you once had for fast food, high in sugar slowly deplete.

You can go the extra mile and have this with cauliflower rice, but I like to have it with a little organic basmati rice. I tend to fill my plate with the curry in a portion controlled way, and have the rice on the side therefore adding it when I need it. This stops me from overloading my plate unnecessarily.

  • 2 small red onions sliced
  • 1 carton of chickpeas
  • 1 carton of green lentils
  • 1 box of mushrooms diced small
  • 1 cups of peas
  • Thumb size knob of ginger minced
  • 2 cloves of garlic minced
  • 1 tsp of turmeric
  • 1 tsp of garam masala curry powder
  • 1 tbsp of coconut oil
  • 1 tsp of cumin
  • 1 can of organic chopped tomatoes
  • Natural yogurt to dollop when serving

Heat the oil on a medium heat in a pan add the onions and cook until soft. Add ginger and garlic plus a tablespoon of water to let the juices out. Stir for a couple of minutes. Now put everything else in stir and add 150ml of water and cook it for 25 minutes.
