This is a quick and easy lunch. Eggs are one of my favourite things. This lunch is filling and will keep you going until supper time.
- 2 eggs whisked
- Pinch of salt
- 4 Organic mushrooms sliced
- 4 mini plum tomatoes sliced in half,
- Handful of broccoli florets
- 1.5 tablespoon coconut oil
Heat a frying pan and melt coconut oil. Once it is done add the vegetables and saute them for 6 minutes. Add the eggs, and cook on low to medium. Stay with until the egg is cooked.
Enjoy it for lunch or breakfast
